Roasted potatoes with fried eggs

1.2 kg of boiled potatoes
4 tablespoons of breadcrumbs
butter for roasting
1 onion
oil
8 eggs
salt
pepper
2 sprigs of parsley

How to proceed
Preparation: approx. 25 minutes
Peel the potatoes and cut them into small pieces. Mix them with the breadcrumbs. Heat plenty of butter for roasting, brown the potatoes over medium heat, stirring occasionally, for approx. 10 minutes. Meanwhile, halve the onions and cut them into strips. Heat a little oil in a second pan and cook the eggs in a pan. Add the onions to the potatoes and continue cooking for approx. 5 minutes. Season the potatoes and eggs with salt and pepper.
